Ruche

Ruche is part of the Domaine les Bruyères, a restored country house at the edge of the Rambouillet forest, about an hour west of Paris. Cybèle Idelot, originally from San Francisco, runs the kitchen; the estate is run with Franck Idelot. Michelin had already given it a Green Star in 2023 for its sustainable approach, and the 2026 guide added a first star.

Most vegetables and herbs come from the estate's permaculture garden, and the kitchen aims for zero waste, with house ferments and very short supply chains. Tasting menus run to five or seven courses, with a vegetarian version on request when booking. The décor is Scandinavian and spare, the park is all around, and guest rooms allow you to stay the night.
